Sheet-pan dinners are a lifesaver on busy evenings: one pan, minimal chopping, and almost no cleanup. Salmon cooks quickly, so the trick is giving the vegetables a head start. This version uses broccoli and sweet potato with a simple lemon-garlic seasoning. It is a calm, fuss-free dinner that feels a bit fancy.
- Prep time: 15 minutes
- Cook time: 25 minutes
- Servings: 4
Ingredients
- 4 salmon fillets (about 5 to 6 oz / 140 to 170 g each), skin on or off
- 1 large sweet potato, cut into 1/2-inch cubes
- 3 cups broccoli florets
- 1 red bell pepper, cut into strips
- 3 tablespoons olive oil, divided
- 3 cloves garlic, minced
- 1 lemon, zested and sliced
- 1 teaspoon smoked paprika
- 3/4 teaspoon salt and 1/4 teaspoon black pepper
- Fresh parsley or dill for serving (optional)
Steps
- Heat the oven to 425°F (220°C). Line a large rimmed sheet pan with parchment.
- Toss the sweet potato cubes with 1 tablespoon oil and a pinch of salt. Spread on the pan and roast for 10 minutes.
- Meanwhile, toss the broccoli and bell pepper with 1 tablespoon oil and a pinch of salt.
- Mix the garlic, lemon zest, paprika, remaining oil, salt and pepper in a small bowl.
- Pat the salmon dry. Brush or spoon the garlic mixture over the top of each fillet.
- Pull the pan out, push the sweet potatoes to one side, and add the broccoli and pepper. Nestle the salmon on the pan, with lemon slices on top.
- Roast 10 to 14 minutes, until the salmon flakes easily and reaches 145°F (63°C) at the thickest part, and the vegetables are tender and browned at the edges.
- Scatter with herbs and serve with extra lemon.
Storage tips
- Cool leftovers quickly and refrigerate within two hours.
- Store salmon and vegetables in an airtight container for up to 2 to 3 days.
- Reheat gently at low power in the microwave or in a 275°F (135°C) oven so the fish does not dry out. Cold flaked salmon is also great over a salad.
- Roasted vegetables hold up better than the fish, so if you are prepping ahead, cook the veggies in bulk and the salmon fresh.
Simple swaps
- Fish: trout, arctic char, or cod work. Thinner fillets need less time, so check early.
- Vegetables: asparagus, green beans, zucchini, or Brussels sprouts halved. Quick-cooking veggies can go on the pan when the salmon does.
- Frozen salmon: thaw it fully in the fridge overnight, then pat very dry before seasoning.
- Flavor: a little honey and mustard, or soy sauce and ginger, make a different glaze.
- Starch: replace sweet potato with baby potatoes, or skip it and serve over rice or quinoa.
Tips for better results
Do not crowd the pan. If vegetables are piled on top of each other they steam instead of roast, so use two pans if needed. Cut the vegetables to similar sizes so they finish together. Dry the salmon well because surface moisture stops the seasoning from sticking and the edges from browning.
Salmon is done when it turns opaque and flakes with a fork. If you prefer it a bit more tender and medium, pull it a few minutes earlier, though the food-safety guideline is 145°F. Resting for two minutes after the oven also helps keep it juicy.
For a nice finish, spoon a little plain yogurt mixed with lemon juice and dill over the plate. It adds creaminess without much effort.
