Taco night does not need to be heavy. These turkey taco bowls pack lean ground turkey, a homemade spice blend, rice, beans and fresh toppings into one colorful bowl. They come together in about 30 minutes, work well for meal prep, and everyone can build their own.

  • Prep time: 15 minutes
  • Cook time: 20 minutes
  • Servings: 4 bowls

Ingredients

Turkey

  • 1 lb (450 g) lean ground turkey
  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt, and black pepper to taste
  • 1/4 cup water or low-sodium broth

Bowls

  • 2 cups cooked rice (brown, white or cauliflower rice)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels, frozen or canned
  • 1 cup cherry tomatoes, halved
  • 2 cups shredded romaine or cabbage
  • 1 avocado, sliced
  • 1/2 cup salsa
  • 1/2 cup plain Greek yogurt, for a sour-cream style topping
  • 1 lime, cut into wedges, and cilantro if you like it

Steps

  1. Cook the rice according to the package if you do not already have some ready.
  2. Heat the oil in a large skillet over medium heat. Cook the onion for 3 to 4 minutes until soft, then add the garlic for 30 seconds.
  3. Add the turkey. Break it up with a spoon and cook 6 to 8 minutes until no pink remains and it reaches 165°F (74°C).
  4. Stir in the chili powder, cumin, paprika, salt and pepper. Add the water, and simmer 2 to 3 minutes until the liquid is absorbed.
  5. Warm the beans and corn together in a small pot or the microwave.
  6. Stir a squeeze of lime into the yogurt with a pinch of salt for a quick crema.
  7. Build each bowl: rice, then turkey, beans and corn, lettuce, tomatoes, avocado, salsa and a spoon of the yogurt crema.

Storage tips

  • For meal prep, keep the cooked components (rice, turkey, beans and corn) in containers and add fresh toppings the day you eat.
  • Refrigerate cooked parts within two hours, and eat within 3 to 4 days.
  • Cooked turkey freezes well for up to 3 months. Thaw overnight in the fridge.
  • Avocado is best sliced fresh. If you must cut it early, squeeze lime over it and press wrap against the surface.
  • Reheat until steaming, then add cold toppings after.

Simple swaps

  • Protein: lean ground chicken or beef, or crumbled tofu or lentils for a meatless version.
  • Base: use chopped lettuce only, quinoa, or baked tortilla chips for a nacho-style bowl.
  • Toppings: pickled red onion, jalapeño, shredded cheese, or roasted sweet potato.
  • Spice level: add cayenne or chipotle powder for heat, or reduce the chili powder for mild.
  • Store-bought seasoning: a taco seasoning packet works, but check the sodium on the label.

Making it work for the whole table

Bowls are great for mixed preferences. Put everything out in separate dishes and let people build their own, so picky eaters can skip the beans while others pile on extra vegetables. Kids often enjoy assembling their own bowl, which can make dinner less of a negotiation.

Lean turkey can turn dry, so do not overcook it and do not skip the splash of liquid at the end. The small simmer helps the spices coat the meat and keeps it juicy. If you use extra-lean turkey, a little more oil in the pan is helpful.

The spice blend is also useful on its own. Mix a larger batch of the chili powder, cumin, paprika and salt, and keep it in a jar for quick weeknight tacos, roasted vegetables or sprinkled over eggs.
